Our cooking lessons are intended to unite the traditional and the modern.
There are old recipes which require slow cooking and modern recipes which follow the faster rhythms of today.
A lesson with Anna and Lorenzo is more than just a cooking lesson:
it is a trip into the various regions of Italy with its varied tastes and flavors.

Sformati
The sformati are a forgotten Italian tradition and to think they are really quite simple to make and are so good.
There is a sformato for every season using spinaci, carciofi, cavolo, fagiolini, whatever is fresh and available.

Game
In Tuscany “la ciccia” meaning meat in general, is on every restaurant’s menu but it doesn’t just mean the Florentine steak it means recipes using wild pheasant, wild boar and wild hare, recipes going back to great grandparents time.

Old Recipes Brought to Life
With Anna you will take a trip into Tuscan cooking. Bollito, polpette, riso rifatto, carabaccia, pappa al pomodoro and ribollita are just a few of the traditional dishes you can learn with Anna.

Soups picked up during Anna’s many trips
Anna’s travels throughout Italy exposed her to every region’s specialties, many of which were soup recipes.
She will teach you her most favorite recipes.

Fish redoes in half an hour
Cooking fish is always a little daunting: You have to clean it, scale It, fillet it and oftentimes you end up cooking something else.
But cooking fish isn’t as difficult as it seems. Together with Anna you will learn to cook excellent fish dishes in just 30 minutes.

Menus
If you have an idea for a second course but must balance it with an appetizer and a first course and then dessert Anna will teach you how to balance your meals.

Pasta
Cooking pasta sounds easy but you have to find the proper balance between the typical sauces, meat, vegetable, tomato and the type of pasta, long, short, fresh or packaged.

Cooking with Leftovers
Leftovers inspired generations past to economize and invent and many recipes using leftovers have come down to us today.
